Oats Khichdi / Porridge / Congee



 Ingredients

  1. One Teaspoon of Mustard seeds
  2. One Teaspoon of Cumin seeds
  3. Half a Teaspoon Turmeric Powder
  4. One Teaspoon of Dried Red Chilli Powder
  5. One Dried Red Chilly
  6. Asofoetida/ Hing (Optional)
  7. Three Teaspoons of Olive Oil
  8. Three Teaspoons of Salt
  9. Two cups of Oats
  10. One cup of veggies(includes Carrots, Peas, Beans , Sweet Corn)
  11. Ghee (Optional/Non Vegan)
  12. Four cups of Water
  13. Curry Leaves / Curry Leaf Powder 
  14. 3 Chopped Garlic Cloves (Optional)




 Instructions:

  1. Set Instant Pot to Saute Mode .
  2. Heat the Olive Oil and lightly stir the Mustard seeds ,Cumin seeds,Dried Red Chillies, Curry leaves, Asofoetida,Turmeric powder, chopped Garlic for 30 seconds until a smoky flavor releases.
  3. Add the veggies and stir them for 1 minute.
  4. Rinse the Oats(instant Oats) with water and saute them along with the Veggie Seasoning for 1 minute.
  5. Add Red Chilli powder, Salt and the 4 cups of water into the instant pot and stir all the ingredients well.
 

6. Close the Instant Pot lid, Press the Cancel button and set the manual timer to 4 minutes.
7.Wait for a Natural Pressure Release and open the lid. 



















8. Stir the cooked Oats mixture and add Ghee (optional) before serving into a bowl.
